Days 5, 6, and 7: Camping in the mountains

We had a great weekend, hanging out in the mountains with most of our kids, including our married daughter and her husband. I’m tired tonight, but wanted to get the three days of menus written out while I still have them in my head. And remember– in the morning I will be announcing who won the laptop giveaway!

Breakfast: Polenta, toast, and hashbrowns (made from leftover baked potatoes) with onions, garlic and green peppers.
Lunch: Best Sandwiches Evah (I’ll share the recipe sometime this week. And you may want to buy cream cheese.)
Dinner: Hot dogs over the campfire, fruit salad (cantaloupe, watermelon and grapes ALL from our garden), sliced tomatoes and peppers, and chocolate picnic cake for dessert.

Breakfast: Pancakes, bacon, grapes and OJ
Lunch: Apricot Chicken, rice, Jazzy Ramen Noodles, cantaloupe, peanut butter cookies
Dinner: Three Cheese Lasagna (with zucchini instead of the cottage cheese), fresh bread, and grapes. And lemon cake.

Breakfast: Pancakes, bacon, apples, and OJ
Lunch: Spaghetti and meatballs, bread, watermelon, and peanut butter cookies
Dinner: Hamburgers with cheese and tomatoes, couscous, and cantaloupe (Yes, our garden is busting out all over in cantaloupe!)

Money spent: $10 for coke, chips and pretzels on the way down the mountain….bringing my total for the month to $162. I MUST NOT SHOP this week. That is all.


  1. Looks like good food! I have cream cheese…I’ll watch for that sandwich recipe.
    I’m blowing through my budget too. I wanted a challenge and it looks like I got one! Produce and dairy – that will be all this week.
