It's A Soup-Tacular!

BooMama is asking for soup recipes today, and since I have the easiest, healthiest, and possibly the yummiest chicken noodle soup recipe on the planet, I’m in.

Mary’s 20 Minute Chicken Noodle Soup

–Bring 8 cups of water to boil in a large pot.

–Chop 2 chicken breasts into bite-sized pieces and fry in a dab of oil. (If you happen to have a cup or two of already cooked chicken in the freezer, or maybe a leftover piece or two of deli chicken, you can do this whole recipe in 10 minutes. )

— Chop 1/4 of a cabbage into fine slivers, like cole slaw.

— Grate two carrots.

–Mash 2 cloves of garlic.

— Add all of the above ingredients to the pot, either before or after the water comes to a boil. Once the cabbage has been boiling a minute or two, add 4 packages of ramen noodles along with only TWO packages of the dry soup mix that comes with the ramen. Cook 3 minutes. Taste. Add a slosh of soy sauce if you like. (I like.)

— Serve!

(This is fine as a leftover too, as long as you don’t overcook the noodles when reheating.)

  2. Oooo, and I just thinking about chicken soup today for dinner!

  3. This would serve about 6 people, I think. When I make it for 12 people, I double this recipe and usually have some left over.

    I have a terrific recipie for curried carrot soup with croutons if interested. We love curry in our house!

  6. it is DEFINITELY a soup sort of week. WHERE IS THE SUN? Its not even snowing… and the snow melted weeks ago. its brown and gray.

    Open can of Hearty Tomato Soup

    Pour into pot and stir, warming over medium heat

    Serve with bread (fresh from the grocery store’s bakery day-old rack.)

    (Yes, I really am that classy…)

  8. Ack! I’ve been extremely negligent in reading my bloglines for weeks now, and I MISSED this (I’m actually here to comment on something of yours I read weeks ago, I think). I just ran back over to my blog, revised two soup recipes I’ve posted in the past few weeks (how many times am I going to use the word “week” in a sentence??) and linked to BooMama’s.     Oooo, mine were both for chicken, too, but yours is different and EASY. Gosh, I’m a soup girl…can’t believe I didn’t think of this!
