Shannon‘s asking us to share our favorite FAST three ingredient meal today.
My three ingredients are rice, chicken, and a packet of frozen Oriental stir-fry veggies. I start my rice cooking in the rice cooker (–what? you don’t have a rice cooker? Ask for one for Christmas. Thank me in January.) Then I chop my chicken in bite sized cubes and stirfry it with some garlic, black pepper and oil (sesame oil is extra yummy). I zap the frozen veggies in the microwave for a couple minutes to take the ice off them. Then once I have my chicken cooked, I add the frozen veggies and stirfry it all til it is hot. Add soy sauce to taste, and there you have it– a healthy 3-ingredient meal in about 20 minutes.

I cook everything in the rice cooker! I think I use it mainly for oatmeal and applesauce. 🙂
That sounds great! We love stir fry here. I posted our quick recipe for Cuban Black Beans & Rice (Frijoles negros) at my blog. We’re Cuban so our quick recipes tend to be ones my mother-in-law has taught me. 🙂
Oh and a rice cooker is definately on my wish list. My MIL has one and I covet it! LOL

It’s on my Christmas List! I told my hubby “everyone with a child from Ethiopia needs one” he did a quick count in his head and said “we don’t have an Ethiopian child” my response……… “not yet”
