And here’s one of our favorite summertime recipes to use some of that beautiful produce

Black Bean and Garden Veggie Dip for a Crowd


• 2 15-ounce cans black beans
• 3 chopped bell peppers, different colors
• 1-2 cups corn
• 3 chopped tomatoes
• Juice of 2 limes
• 1 cup Italian salad dressing
• 1 minced onion (white or red)
• 2 Jalapeno peppers
• 1 cup chopped cilantro
• 2 cloves garlic, minced

In a large bowl, mix all ingredients. Toss and chill, covered, until serving. Serve with tortilla chips.

  4. Nummy. Where I come from we use blackeyed peas and a can of corn and call it “Carolina Caviar.” No matter what you call it, though, it’s definitely (healthy) good eats!

  10. Okay, this is sorta random, but if I would have seen this recipe as a kid, I would have been grossed out. I hated peppers (and onions, and tomatoes, and pretty much everything else good for you.) But just the other night my wife made stuffed peppers and I remember thinking, “Dang, I love peppers. These are really good.”

    I heard once that if you try something at least three times, you’ll eventually start to like it. I guess maybe that’s true…so you should never lose that sense of adventure, because you never know what you’re missing out on.

  13. Very artistic picture. Whenever I cut open a pepper my #3 always says, “Are there any babies inside.” You know how sometimes they grow a little pepper inside…he likes to eat it. Odd.

    Great looking recipe. I have a dozen ears of corn to use up.
