Day 16

Another day of canning like crazy.  This morning we did apple butter (6 pints) and applesauce (18 qts). I am going to run out of jars soon, and we haven’t even done grape juice yet .

We have now gotten about 7 bushels of apples off our trees.  They are half empty, we estimate.   It is insane.   We are all sick of canning, but we are going to have plenty of applesauce this winter.

I’m wishing our extra fridge hadn’t broken this spring– I could really use some more fridge space for apples to eat in the next few months.  Then again, maybe I should just be thankful for the 25 cubic foot fridge I have! (shaking head at my self…)

No shopping today. No books. (Is my book obsession mellowing??)

Breakfast: waffles and OJ

Lunch: stir-fry (veggies, beef, and rice) and watermelon.

Dinner: Spaghetti, apples, cookies.

Picture of the day: our 4 year old riding her bike!!  See the training wheels in the background?  All in 20 minutes she learned to balance, stop, start, AND skid-stop just like her big brothers.  You should see her tearing around!

  1. That's great that she can ride a bike! My 4 year old still has a hard time peddling her trike! I think I may have to step it up a notch.

    Thanks for visiting me!

  2. i think it's awesome that you're doing all that canning; i'll bet your kids will have fond memories of it when they get older. i do – and i LOVE getting home-canned gifts from my mom! 🙂

  3. Hi,

How do you make apple butter???

  4. it's great you do canning, I wouldn;t even know where to start. Your daughter is adorable, way to go on the bike riding.

OH is a great way to find a fridge or anything your looking for. check it out it's on yahoo and completely FREE

  5. This is my first visit to your blog. When I saw this picture, I just had to leave a comment. Our nest is empty now; we have two sons and a daughter. Our daughter was adopted, and you picture reminded me so much of her. She is bi-racial and the most beautiful young woman you have ever seen – inside and out. She is an absolute joy. I so admire your large family. I don't know how well I would have done with eight, but our three are such a blessing now. The boys are married, and so our numbers have grown to 14 counting grandchildren. It is such fun. When we are all together it is a real squeeze around our large dining room table, but I love it that way. Thanks for letting me visit.

  6. Great photo!

  7. That is so cool that she got it that quickly!!

  8. Apple butter, yummy! My grandma used to make that for everybody. I haven't had it in so long. Man I wish I knew how to make things like that.

And she is precious! I can't believe she got rid of the training wheels so quickly!
